Dog Muffins Anyone??


No, this is not a recipe for muffins for your dog.  Sorry.    It's a favorite recipe of mine because even though it makes a LOT of batter, it will keep for several weeks in your refrigerator.  This recipe uses all natural ingredients, nothing prepared, which is yet another reason why I like this recipe.  There is another similar recipe floating around out there that uses a certain kind of cereal with a similar result to this recipe.
  Since its mixed up and readily on hand, I can pop in muffins for breakfast really fast.  Several years ago, I began making these muffins for my family, almost everyone liked them.  Caleb, who was around 6 or 7 years old, hated  (totally hated) these muffins.  He normally likes just about any baked good, but NOT these.  He even started calling them Dog Muffins, not because they tasted like dog food, not because they smelled like a dog, but just because he did.  It really doesn't make a lick of sense why he would call them that, and now, almost 7 years later, he likes them and eats them with no problems.  He was even excited when he saw me baking them the other morning!  
So, you can call these yummy muffins whatever you like, but 'round here...they're Dog Muffins.

Dog Muffins
6 cups  Wheat Bran (found in cereal aisle, bulk foods, health food store)
2 cups Boiling water
1 cup Butter or margarine (melted)
3 cups Sugar or 1 1/2 c. Honey
4 Eggs, beaten
1 Quart Buttermilk
5 cups flour
5 tsp. Baking Soda
2 tsp. Salt
1 1/2 cups Raisins (optional)

In a large bowl, pour water over Bran.  Let stand until liquid is absorbed and has slightly cooled. 
In another bowl mix the dry ingredients.  Add Bran, eggs, butter, and buttermilk.  Stir until combined.
Bake in greased muffin tins/papers.
400 degree oven for 15- 20 minutes.
Makes 6 dozen.
Store up to 6 weeks in the refrigerator.
