A Yummy Breakfast Treat
I'm always on the look out for yummy breakfast ideas that don't take a lot of time and preparation. I'm not a morning person and anything I can do to make things easy and still satisfy the hungry children of the dark side, the better.I originally saw this recipe on Gayle's blog, The Grocery Cart Challenge. She lists her weekly menu there so that we can see how she is accomplishing her goal. Since I was on the hunt for inexpensive breakfast ideas, I knew that she would have some yummy recipes to try. Sure enough, I was right! The recipe I tried was the Apple and Oats Breakfast Pudding The recipe originated from Recipe Zaar, which is also a great place to visit.

Apple and Oats Breakfast Pudding
2 cups Non fat Milk
3 tablespoons Brown Sugar
1 tablespoon Butter
1/4 teaspoon Ground Cinnamon
1/8 teaspoon Salt
1 medium Baking Apple (peeled, cored, and diced)
1 cup Rolled/Old Fashioned Oats (not quick oats)
1 teaspoon Vanilla Extract
1/4 teaspoon Ground Nutmeg
1 tablespoon Cream/Milk (per serving)(optional)
Directions:
1. Preheat oven to 350. Lightly coat a 1 quart baking dish with oil spray.
2. Combine the milk, sugar, margarine or butter, cinnamon, and salt in a 2 qt. glass/microwave safe dish or measuring cup (I used my large one from Pampered Chef). Cook on high for 4 minutes to scald the milk.
3. Add the apple and the oats. Stir in the vanilla.
4. Pour the mixture into the prepared baking dish. Bake for 15 minutes.
5. Remove from the oven, stir thoroughly. Sprinkle the top with nutmeg. Return to the oven and bake for 15 more minutes.
6. Serve warm with cream or milk.
If you like to vary things from the traditional cereal and toast and want to do it inexpensively, this is a great way to do it! Next time, I'm also going to add a few frozen blueberries. Yum!
As you can see from the photo, it was a hit with the kids. Although, it seems that I rarely get any leftovers with 5 kids in the house!
I am going to try this recipe. I have just recently really gotten into making bigger/better breakfasts on the weekends as a special treat to my family. It is difficult for me to get out of my rut . . . so I will give this one a try and just trust that it is a good yummy recipe. Thanks for sharing . . .
