Food, Glorious Food!

One of my favorite parts of life is food. Not just eating breakfast, lunch and dinner, but all things food. I love to watch food shows, read food articles, books, and magazines. I love collecting recipes, tips and tricks. I read a few food blogs and especially LOVE one that has great photos to go along with all of her recipes. Recently, I've had the opportunity to get my hands on LOTS of apples after our recent windstorm. A local orchard had "drops" because the wind had blown them off the trees onto the ground. They're not rotten at all, they just were displaced in the storm . Through a friend I was able to find out about this and got a whole bushel for only $ 5.00!! That's a steal, in case you don't know about apple prices. In comparison, a bushel of apples is 48 pounds and if you paid the store price for that many apples it would cost you (@ 1.49 a pound, regular store price) a whoppin' $ 71.52 !! How 'bout them apples?!! What a deal! I've made several quarts of applesauce and several pints of apple butter. It's been great! Today, I picked up another bushel and plan to make apple pie filling, sliced apples for freezing, and more applesauce.

So, in light of my apple business, I thought I'd share a recipe for some very YUMMY apple muffins. I don't make them often, but I do if have chopped up apples in the freezer!

Don't worry if you don't keep buttermilk, soured milk works just fine too.




Apple Streusel Muffins

Topping:
1/3 cup brown sugar
1/2 tsp cinnamon
2 tbsp butter
1/2 cup walnuts or pecans or oatmeal

Mix all ingredients to resemble coarse crumbs. Set aside.

Batter:
1 1/2 cups All Purpose flour
1/2 tsp baking soda
1 tsp baking powder
2/3 cup brown sugar
1/3 cup oil
1 egg
1/2 cup buttermilk
1 tsp vanilla
2/3 cup grated apple (2 apples, peeled and grated)
1/2 tsp salt

Preheat oven to 350F. Grease muffin tin or line with paper liners.Mix together all dry ingredients. Whisk together all wet ingredients. Fold flour mixture into wet ingredients until just combined.Spoon batter into tins and top with streusel mixture. Bake 20 minutes, or until tester comes out clean. Makes 8 large muffins.
I fill my tins about 2/3-3/4 full, any more than that and the streusel topping spills over and melts onto the muffin tin (so sad). So don't try to cram in just 6 muffins!!! I usually just double the recipe anyway because we need more than 8 muffins to feed the famished 5. They're especially yummy warm from the oven! Hope you enjoy them!

  1. Mmmmm...that sounds very yummy. I read that you can "make" buttermilk with milk and lemon juice too. I shared a recipe a day or so ago too! I love any kind of muffin...wait...not the poppy seed kind. :P Thanks for the share, and that's SO great about the oodles of apples!!

  2. Living in Honduras I cannot buy buttermilk. You can just use 1 tbsp white vinegar and then fill the measuring cup to the 1 cup mark. Stir and let stand 5 minutes. It works great. We use it for buttermilk pancakes all the time.

    If the apples you got were of the granny smith variety, I have a super yummy apple butter recipe that cooks overnight in your crockpot. It tastes like Cracker Barrel Apple Butter (in my opinion you can't get any better stuff) and makes your house smell so yummy when you wake up. If you want this recipe just email me.
