Not Your Ordinary Muffin
Who doesn't like to wake up to the smell of freshbaked muffins?? Or for that matter, fresh baked anything! Muffins, Cinnamon Rolls, Breakfast bread, mmm, I love it all. Well, if we're having muffins at our house for breakfast then it's because I made them. On the other hand, if you smell donuts or rather the smell of sugar, then Brian has awakened first and gone to the donut shop. (A side thought... If I died, and Brian was responsible for feeding the family--- What would they eat?) Of course, if you know the Hayden's, all of these smells would be promptly followed by the smell of fresh ground and brewed Starbucks Coffee.
All of that to say, I've found the most delicious recipe for Blueberry Muffins! It's sure to tickle your toes and slap you silly! (sorry, too much Patch the Pirate) They turn out great everytime with fresh or frozen berries and you can double the batch (as we do) and they still come out delicious. If you don't like to wake up early and bake, then do it the night before and warm them in the oven in the morning! I hope you'll enjoy them as much as we do!
Mamu's Muffins

2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup butter, softened
1 cup, plus 1 Tbsp. sugar, divided
2 large eggs
1/2 cup milk
1 tsp. vanilla extract
2 1/2 cups blueberries (spend 'em, it's worth it)
Heat oven to 375*, line muffin pan with paper liners or grease VERY generously so the blueberries won't stick to the side of the muffin cup.
Combine dry ingredients in a large bowl. In a small bowl, beat butter and 1 cup of the sugar until fluffy, add eggs, vanilla, and milk. Fold in wet ingredients into dry, mix lightly until batter is smooth. Add blueberries. (Note - if using fresh berries, crush 1/2 cup of the berries and add to the batter)
Spoon batter into prepared muffin cups. Sprinkle with remaining sugar. Bake 30 minutes or until toothpick comes out clean. Cool muffins in pan 5 minutes, then remove from pans onto a wire rack. Makes 12 muffins. ** These also freeze well.
Next, brew your favorite blend of coffee or tea and enjoy!!

That sounds like a good recipe. On the 1/2 butter.... you meant 1/2 cup of butter, right? Or 1/2 cube? I'm sure it would be cup. Looks yummy. I'll have to try them out on my family.
