Something Yummy For Your Tummy-- Pizza Edition

Do you ever have one of those days when you feel vastly inferior to just about anything or anyone? Here I am, the mature, 33 year old, mother of four beautiful children, teacher of elementary school, housekeeper, chef, and blah, blah, the list goes on. Today is Friday, it's quiz day, spelling test day, unit test day and Mama goes to the dr. for her yearly visit to the doctor of female tortures. All was going according to plan... I was 5 min. late to the dr., Caleb did bad on his spelling test, Titus has a cold and is smearing me with snot from top to bottom! Tonight we're supposed to go to the Fehlen's for dinner and quartet practice, so I'm making cookies to take along.I have baked these cookies a dozen times or so, this should be easy. ...great! Caleb's taking a math quiz at the table, I'll just whip these cookies up and bake them. All the ingredients go together, they smell great, the dough tastes heavenly, this is going to be good. 9 minutes in the oven and I'll have my first dozen beautiful cookies. grrrrrrrr. My beautiful cookies!!! They turned out as flat as the cookie sheet!! They look flat, greasy and nasty. Gee, I can't wait to share these with my friends! The problem I discovered was that when I doubled the recipe I ADDED wrong and was 1 1/2 cups short on flour. Well, duh of course the cookies are going to smoosh when they have no substance to keep them together!!
And these are the times when we become afraid...."She's the Math teacher?"
